Ngoc Thanh Tran is from the city of Ho Chi Minh and made his way to London via Sydney. He was only intending to stay for a year while he studied tourism, but a day trip to Greenwich changed everything: 'I was so excited to see the street food market in Greenwich and there was not any Vietnamese food stall yet, so I came up with the idea to run a business in London, introducing Vietnamese foods to many tourists and local people in the famous tourist destination'. He's been here ever since, serving banh mi - the addictive Vietnamese take on a chicken baguette - and fresh summer rolls to a dedicated clientele." The Greenwich Market Cookbook.
